This one I'm claiming full credit for inventing. I started making this in college when I was desperate for a snack with not much in my apartment.
Ingredients:
1 can fat-free refried bean
1 can black beans
1 brick fat-free cream cheese
1 cup salsa - any heat, any flavor, the sky is the limit
1 tsp cayenne pepper
1/2 tsp cumin
In a quart size pot over medium-low heat add all the ingredients - do not drain the black beans. It's a little tough to stir in the beginning, but be patient and just let the pot hang out for a while and give it the occasional stir to combine all ingredients. Once the dip is smooth and creamy it's done. Serve with any kind of chip for any kind of occasion :)
If you like super spicy, use a really hot salsa and/or increase the amount of cayenne. There are flavored varieties of beans that would be lovely in this recipe. A friend of mine is vegan and uses vegan cream cheese instead of the fat-free. Make it your own!
